Longer days and more sunshine inspire me to eat more colorful foods. I recently watched the documentary Forks Over Knives which confirmed many of the beliefs I hold towards food’s medicinal power. As a student, I find myself opting for not-so-healthy snacks even though health is at the forefront of my mind. Watching Forks Over Knives re-inspired me to eat more vegetables and nutritionally rich foods. This salad is colorful, refreshing, and has just the right combo of sweet and sour. The lemon naturally preserves the salad too so don’t be afraid to make a lot at the beginning of the week to save!

Ingredients:

4 carrots

4 celery stalks

1 apple (I used Fuji)

1 bell pepper (any color)

Juice of ½ lemon

½ tsp Kuli Kuli Moringa Powder

½ tsp honey

How to:

1. Chop apple and all vegetables into bite-sized pieces before mixing in a medium-sized bowl.

2. In a small bowl, whisk together lemon juice, moringa powder, and honey.

3. Poor over salad and enjoy!
